Amazing Vegetarian Quesadilla Recipe: Quick and Delicious




These vegetarian quesadillas are a quick and healthy addition to your family meal plan

I was asked for a vegetable recipe for picky eaters and here it is. My family eats this recipe weekly. My kids love that it is a finger food, my partner loves the flavour and I love that it is filled with vegetables. The recipe makes quite a lot too so yay for leftovers!

Ok so it’s not exactly a traditional quesadilla recipe, more of a tex-mex version. But the barbecue sauce provides a lovely sweetness that combines well with the smokey spice mix. I use a fajita spice mix with roasted capsicum and paprika but any Mexican spice mix will work equally well.

You could use any type of tortillas for this recipe but I use mini flour tortillas as it makes them easier to eat. Gluten-free tortillas work equally well too. And if there is any mixture leftover after the tortillas are finished, just use bread instead for a delicious toasted sandwich.

These tasty vegetarian quesadillas are a crowd pleaser too. Since each tortilla is cut into four smallish pieces to eat anyway, it is perfect for finger food at a party. To save time on the day, I make them up toasted the night before (but leave uncut) so that they only need to be reheated in the sandwich press until the cheese has melted.

This recipe is so simple that kids can get involved in making vegetarian quesadillas too. Even very young children can enjoy spreading the bean mixture onto the tortillas and sprinkling the cheese. And they make a great snack in the school lunch box the next day.

The bean mixture can be made ahead and stored in the fridge.

Vegetarian Tex Mex Quesadillas

Equipment

  • Sandwich press

Ingredients
  

  • 1 large onion
  • 2 large green capsicums
  • 1 large carrot, grated
  • 2 400g tins red kidney beans
  • 40 g Mexican spice mix
  • 1/4 cup barbecue sauce
  • 2 cups grated cheese
  • 20 mini tortillas

Instructions
 

  • Chop the onions and capsicums
  • Heat oil on medium high in large frypan and saute onion and capsicum until almost soft, about 5 minutes
  • Add grated carrot along with spice mix and cook until soft, 1-2 minutes
  • Roughly mash half the beans then add all beans and barbecue sauce and cook for 2 min or until warmed through
  • Spread about 1/3 cup of bean mixture onto a tortilla
  • Sprinkle over a handful of cheese and top with another tortilla
  • Cook in sandwich press on medium heat until tortilla is brown and the cheese has melted
  • Repeat with remaining ingredients then cut into quarters or wedges and serve

Notes

  1. Leave a border at the edge of the tortilla without bean mixture as the sandwich press will squash it out to the sides
  2. These can easily be cooked in the oven too if you don’t have a sandwich press
